{"id":166,"date":"2008-10-10T09:50:00","date_gmt":"2008-10-10T14:50:00","guid":{"rendered":"https:\/\/thewannabegourmet.com\/?p=166"},"modified":"2008-10-10T09:50:00","modified_gmt":"2008-10-10T14:50:00","slug":"chili-con-carne","status":"publish","type":"post","link":"https:\/\/thewannabegourmet.com\/?p=166","title":{"rendered":"Chili Con Carne"},"content":{"rendered":"<div style='text-align:left' class='yasr-auto-insert-visitor'><\/div><p><a href=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/chiliconcarne.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-167\" title=\"chiliconcarne\" src=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/chiliconcarne.jpg\" alt=\"\" width=\"500\" height=\"333\" srcset=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/chiliconcarne.jpg 500w, https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/chiliconcarne-300x199.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p><em><strong>Chili Con Carne<\/strong><\/em><\/p>\n<p>1 lb 93% lean ground beef (<em>or <\/em>ground turkey breast <em>or<\/em> ground chicken breast)<br \/>\n14 oz dark red kidney beans (drained and rinsed)<br \/>\n28 ounces diced tomatoes (or 2 14 oz cans of petite diced Italian tomatoes)<br \/>\n16 oz water<br \/>\n1 small can tomato paste<br \/>\n1 large onion, minced<br \/>\n4 cloves garlic, minced<br \/>\n4 tbsp chili powder<br \/>\n1\/8 &#8211; 1\/4 tsp cayenne pepper (depending on your tolerance for heat)<br \/>\n4 ounces of grated cheese (Reduced fat Cheddar or Mozzarella are popular)<\/p>\n<p>In a large soup pot over medium heat, brown meat of choice along with onion, garlic and chili powder.<\/p>\n<p>Spoon off any excess fat (there should only be a minimal amount of this), and then add the rest of the ingredients except cheese. Cover and bring up to a simmer, leaving the lid slightly askew so that the pot does not boil over. Allow to simmer for 30-60 minutes. <em>(N.B. The chili flavour actually is better if you can make this they day before and refrigerate over night.)<\/em><\/p>\n<p>This recipe may be modified with the addition of other vegetables as desired; diced carrots are nice, as are sliced, saut\u00c3\u00a9ed mushrooms, diced green peppers, or even jalape\u00c3\u00b1os.<\/p>\n<p>Serve with crackers, over mashed potatoes, in a hollowed out bread bowl, or as a filling to baked potatoes.
