{"id":195,"date":"2008-10-14T08:28:22","date_gmt":"2008-10-14T13:28:22","guid":{"rendered":"https:\/\/thewannabegourmet.com\/?p=195"},"modified":"2023-12-07T14:44:59","modified_gmt":"2023-12-07T19:44:59","slug":"shrimp-sofrito","status":"publish","type":"post","link":"https:\/\/thewannabegourmet.com\/?p=195","title":{"rendered":"Shrimp Sofrito"},"content":{"rendered":"<div style='text-align:left' class='yasr-auto-insert-visitor'><\/div><p><a href=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/sofrito.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-196\" title=\"sofrito\" src=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/sofrito.jpg\" alt=\"\" width=\"500\" height=\"333\" srcset=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/sofrito.jpg 500w, https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/sofrito-300x199.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p><em><strong>Shrimp Sofrito<\/strong><\/em><\/p>\n<p>4 tbsp olive oil<br \/>\n4 tbsp unsalted butter<br \/>\n2 cloves garlic, minced<br \/>\n1 lb 26-30 shrimp, peeled and deveined<br \/>\n1 medium red onion, cut into wedges, about 1\/4 inch wide<br \/>\n1\/2 red bell pepper, green bell pepper, orange bell pepper (each), seeded and cut into 1\/2&#8243; wide strips<br \/>\n14 ounces tomatoes (chopped, seeded and juiced) (one large beefsteak tomato, or two smaller tomatoes, as long as not hothouse)<br \/>\nPinch cayenne pepper<br \/>\n1\/2 tsp paprika<br \/>\n1\/2 cup Pecorino Romano cheese, freshly grated<br \/>\nSea salt and freshly ground black pepper<br \/>\n2 tbsp fresh cilantro leaves, finely chopped<br \/>\nCooked brown rice<\/p>\n<p>Heat the oil and butter in frying pan until foamy. Add garlic and cook for 1 minute. Add shrimp and saut\u00e9 over a medium-high heat for about 2 to 3 minutes, just until they turn pink. Remove and keep warm in a covered bowl. Next, add onion and peppers to the pan and cook on low heat for 10-15 minutes, until just softened but not mushy.<\/p>\n<p>Stir in the tomatoes, cayenne, and paprika and cook for about 5 minutes (tomatoes will begin to break down and blend into a sauce). Add the shrimp back to the pan and stir to combine, adding Pecorino Romano and cook for one additional minute.
