{"id":219,"date":"2008-10-15T14:33:57","date_gmt":"2008-10-15T19:33:57","guid":{"rendered":"https:\/\/thewannabegourmet.com\/?p=219"},"modified":"2008-10-15T14:33:57","modified_gmt":"2008-10-15T19:33:57","slug":"tangy-breaded-pork-cutlet","status":"publish","type":"post","link":"https:\/\/thewannabegourmet.com\/?p=219","title":{"rendered":"Tangy Breaded Pork Cutlet"},"content":{"rendered":"<div style='text-align:left' class='yasr-auto-insert-visitor'><\/div><p><a href=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/porkcutlet.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-218\" title=\"porkcutlet\" src=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/porkcutlet.jpg\" alt=\"\" width=\"500\" height=\"333\" srcset=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/porkcutlet.jpg 500w, https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/porkcutlet-300x199.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p><strong>Tangy Breaded Pork Cutlet<\/strong><\/p>\n<p>1 lb boneless pork cutlets (4 oz each), pounded to 1\/4 inch thick<br \/>\n2 large eggs<br \/>\n2 tbsp water<br \/>\n4 cloves garlic, minced<br \/>\n1\/4 tsp crushed red pepper flakes<br \/>\n1\/2 cup plain bread crumbs<br \/>\n2 tsp Italian seasoning<br \/>\ndash cayenne pepper<br \/>\n1\/4 tsp sea salt<br \/>\n1\/4 tsp fresh ground black pepper<br \/>\n2 large tomatoes, diced<br \/>\n1\/2 medium onion, minced<br \/>\n1 tbsp minced basil<br \/>\n1\/4 cup dry white wine<br \/>\n4 tbsp extra virgin olive oil, divided.<\/p>\n<p>In a medium bowl, whisk together eggs and water. Place breadcrumbs on a plate and add red pepper Flakes, Italian seasoning, cayenne pepper, salt and black pepper; stir to combine.<\/p>\n<p>Heat a large skillet over medium heat; add olive oil. Take each cutlet, dip in egg wash, then into breadcrumb mixture, then into the skillet. Cook 2-3 minutes on each side. Remove to a plate and cover with foil to keep warm. Discard remaining breadcrumb mixture and egg wash.<\/p>\n<p>Add remaining 2 tbsp olive oil to pan, then add minced garlic and onion. Cook 3-4 minutes, or until onions are tender. Add tomatoes, basil and white wine. Stir to combine, bring to a simmer. Return pork cutlets to skillet and cook for 2 minutes more on each side or until no longer pink in the middle.<\/p>\n<p>Place a cutlet on each individual plate, and spoon tomato mixture over top.
