{"id":511,"date":"2018-02-23T09:55:30","date_gmt":"2018-02-23T14:55:30","guid":{"rendered":"https:\/\/thewannabegourmet.com\/?p=511"},"modified":"2023-12-07T13:38:32","modified_gmt":"2023-12-07T18:38:32","slug":"cranberry-wild-rice-soup-lighter-version","status":"publish","type":"post","link":"https:\/\/thewannabegourmet.com\/?p=511","title":{"rendered":"Cranberry Wild Rice Soup (Lighter Version)"},"content":{"rendered":"<div style='text-align:left' class='yasr-auto-insert-visitor'><\/div><p><a href=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2018\/02\/cwrs.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-512\" src=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2018\/02\/cwrs.jpg\" alt=\"\" width=\"500\" height=\"333\" srcset=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2018\/02\/cwrs.jpg 500w, https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2018\/02\/cwrs-300x200.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p><em>This recipe has been &#8216;lightened up&#8217;\u009d slightly and is a wonderful soup that, while meat-free, is able to satisfy the carnivores in your life! <\/em><\/p>\n<p><strong><em>Cranberry Wild Rice Soup (Lighter Version)<\/em><\/strong><\/p>\n<p>3 tbsp unsalted butter<br \/>\n1 large carrot, diced<br \/>\n1 celery stalk, sliced no larger than 1\/4&#8243; pieces<br \/>\n1\/2 cup onion, minced<br \/>\n3 tbsp all purpose flour<br \/>\n3 cups organic vegetable stock<br \/>\n1 1\/2 cups cooked wild rice<br \/>\n1\/2 cup dried cranberries<br \/>\n1 cup skim milk or fat free half and half<br \/>\n2 tbsp dry sherry<br \/>\nSea salt and freshly ground pepper to taste<\/p>\n<p>Melt butter in stock pot over medium heat; saut\u00e9 the carrot, celery and onion, stirring occasionally, until the vegetables are tender (about 8 minutes). Add the flour and stir until smooth. Gradually stir in the vegetable stock, whisking as you go to avoid lumps from forming. Increase the heat to medium-high and stir until soup is thickened, about 5 minutes. Stir in the rice and cranberries. Reduce the heat to barely a simmer, cover, and stir occasionally, until the cranberries are plump and soft (about 15 minutes). Add remaining ingredients. Stir occasionally until heated through. Season to taste and ladle into bowls. Top with a teaspoon of grated Parmesan cheese as a garnish.
