{"id":59,"date":"2008-10-04T17:06:55","date_gmt":"2008-10-04T22:06:55","guid":{"rendered":"https:\/\/thewannabegourmet.com\/?p=59"},"modified":"2023-12-07T15:09:10","modified_gmt":"2023-12-07T20:09:10","slug":"spicy-beef-and-broccoli-soup","status":"publish","type":"post","link":"https:\/\/thewannabegourmet.com\/?p=59","title":{"rendered":"Spicy Beef and Broccoli Soup"},"content":{"rendered":"<div style='text-align:left' class='yasr-auto-insert-visitor'><\/div><p><a href=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/spicybeefbroc.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-60\" title=\"Spicy Beef and Broccoli Soup\" src=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/spicybeefbroc.jpg\" alt=\"\" width=\"500\" height=\"333\" srcset=\"https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/spicybeefbroc.jpg 500w, https:\/\/thewannabegourmet.com\/wp-content\/uploads\/2008\/10\/spicybeefbroc-300x199.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p><strong>Spicy Beef and Broccoli Soup<\/strong><\/p>\n<p>2 tbsp Olive Oil<br \/>\n1 lb lean sirloin, cut into small cubes<br \/>\n1 small white onion, minced<br \/>\n2 cloves garlic, minced<br \/>\n28 oz reduced sodium chicken broth<br \/>\n1\/8 tsp cayenne pepper<br \/>\n1\/4 tsp crushed red pepper flakes<br \/>\n1 tsp coarsely ground black pepper<br \/>\n2 tbsp Italian Seasoning<br \/>\n1 tsp ground celery seed<br \/>\n1 lb broccoli florets<br \/>\n1 lb Russet potatoes, julienned (a food processor with a 4mm julienne blade makes quick work of this)<br \/>\nParmesan cheese shavings<\/p>\n<p>In a large soup pan, heat olive oil until the surface shimmers. Add beef, onions and garlic. Stir to break beef cubes apart and saut\u00e9 until brown, 5-6 minutes<\/p>\n<p>When beef is nicely browned, add chicken broth and using a wooden spoon or heat proof spatula, scrape the bottom of the pan to release the <em>fond<\/em> (that&#8217;s the French term for the yummy flavour that has formed, as a brown substance, on the bottom of the pan).<\/p>\n<p>Next, add spices and potatoes, stirring to incorporate. Bring to a boil, then turn heat back to a simmer. Cover, slightly askew and allow to cook for 20-25 minutes.<\/p>\n<p>Add broccoli, stir to combine. Cover, and cook 5 minutes more.<\/p>\n<p>Serve in bowls topped with shavings of Parmesan cheese.
